Italian-Inspired Lasagna Soup Recipe

Vegetable lasagna soup is two comfort foods in one and the most requested meal in our family. The Italian-inspired recipe came out of necessity during our recent move, not having a full size oven to fit my lasagna pan, I had to find a smaller dish for the counter top convection oven. Ramekins were the perfect solution and everyone loves having their very own personalized dish chock full of their favorite vegetables. I've also done this recipe using a slow cooker to make this super simple recipe and ready in 30 minutes!

Vegetable Lasagna Soup

Ingredients:
Bertolli® Riserva Balsamic Vinegar & Caramelized Onions 
ditali noodles 
(ditali are short tube-shaped pasta that resemble fat macaroni, used especially in broth and vegetable soups, I prefer to use mini lasagna noodles but we couldn't find any locally here)
organic vegetable broth
soy protein vegetable ground crumbles (ground beef or turkey can be used)
shredded mozzarella cheese
Romano cheese
fresh mushroom 
oregano
garlic
(other veggie options can be green beans, pass, carrots, diced tomatoes and olives)


Prep time is: 15 minutes
Bake time: 15 minutes

Total time needed: 30 minutes



Preheat oven to 375 degrees 

First fully cook pasta as directed on package and fully cook vegetable crumbles or ground beef in a pan.

To begin layering the ingredients in the ramekin start with sauce on the bottom, then add the two cheeses, pasta, vegetable crumbles, veggies, pour in vegetable broth until its to 3/4 full in the ramekin, then add more Bertolli sauce and top with cheese.

Bake in oven at 375 degrees for 15 minutes

Let sit to cool for 5 minutes before serving.
