Confection Perfection




 The peppermint ice cream caramel toffee chip cookie sandwich.
Quite a mouth full to say and since it's 90% organic it comes nearly guilt-free!!


These have to be the most beautiful and delicious cookies I have ever baked! Why else would I have ban all eating, smelling or drooling until the photographs were taken. There has to be documentation for such perfection. I think I can even smell them through the computer. Seriously!

Want the recipe? I must share it's to good to keep a secret.


 Caramel toffee chip cookie Recipe:

1 3/4 sticks softened butter
1 cup brown sugar
1/2 cup granulated white sugar
2 1/4 cups flour
1 whole large egg
 1 egg yolk
1 Tablespoon baking soda
1 teaspoon table salt
1 1/2 Tablespoons whole milk
1 teaspoon vanilla/bourbon extract
1 cup dark chocolate chips
1/4 Heath Bar toffee chips
5 caramel filled dark chocolates cut in half (Nestle Treasures will work)

Mix the first 3 ingredients in your stand mixer until well blended, then add flour, salt, baking soda, vanilla and blend (I always add the eggs second to last right before the chocolate chips). Add eggs and the remaining ingredients until well incorporated. 

Pre-heat oven to 365 degrees

Spoon onto a baking sheet

bake in oven for 8-9 minutes or until golden brown

then EAT!


Peppermint Ice Cream Recipe:

4 cups whole milk
1 cup granulated white sugar
1 teaspoon peppermint extract
1/4 cup York peppermint patty mini bites (they look like M&Ms)
7 peppermint patties broken into pieces and frozen
mix milk, sugar and peppermint extract for 20 minutes in your ice cream maker then add remaining ingredients mixing until the ice cream is well set and ready to eat.

**For Sandwiches freeze ice cream overnight.**

4 Little Indians




Life is about learning.


Whether it's about the Indians vs the Settlers in the Battle of Burnt Corn, learning that I have lost my patients on the side of the road somewhere between here and Buffalo or maybe it was between marriage and divorce, or that I need to start finding some solace in my life. I feel like there's lit firecracker in my hand and I can't let go, you know its going to hurt but you're just not ready to throw it away. I need to throw the anger away, let go of the fact that what I spent the last 15 years of my life building up was destroyed by someone else and I couldn't stop it. Now I'm starting over from the foundation up and there's 8 beautiful eyes looking up to me to do the right thing. No pressure.




One thing I have recently learned was that the light inside tipis is amazing, I took 4 photos of these photos in less than a minute and they're perfect, in the photographic lighting sense or the word. The kiddos skin tone is to die for! Now I just need to get my hands on one for the backyard.

Friday Night Lights




What do your kids do after you've tucked them in and kissed them all goodnight?

Rarely do I find them asleep right away most of the time I hear the scurry of little feet back and forth from their rooms looking for stuffed animals, whispering secrets and devising a plan that involves sneaking in the living room where I'm finishing up my days work so they can snatch the computer and  play Webkins online. So if my the house is quite and the Peas have seemingly fallen asleep by 8pm there is trouble lurking from under the covers.

Our Family Reunion


There were cousins, second-cousins and never met before cousins.
Aunts, Uncles, Great Aunts and Uncle, Grandparents, Grandkids and Great-Grandparents.




This was the first time the kiddos had ever gone to a family reunion and 15 years for me it was a blast.  We ate, we played games and we met a whole bunch of family old and new. There were 4 generations of crazy fun going on at Chestnut Ridge that day. We miss them all already.







Nana even joined in on the fun with her grandkids and great-grandkids. She is so loved by everyone.


I don't know is Sia is doing water balloon toss or water ballet but she's enjoying it.


They had some minute to win it games for the kids, that photo of Little E is just too funny! Then we took the much anticipated photo. It's crazy to think there's more like a whole lot more only about half of our family made it to the reunion this year. So glad we did!

Banana Bubbles


The Peas spent the afternoon talking, laughing and playing bubbles with their Great-Grandmother Banana as they lovingly call her (since her name rhymes with that yellow fruit). I don't know who had more fun and doesn't she look smashing for spending over 3/4 of a century here! 
I don't know if its the lack on sunshine in Buffalo or good genes but that face is almost wrinkle free and I didn't inherited any of it.





They all were pretty amazing bubbles blowers even the Miracle Bubbles lived up to their name landing on bushes, grass and even hair without popping. If you look closely at Lulu's giant bubble the whole porch is reflected in it twice, upside down on the right hand side and right side up on the left and the top mirrors the bottom, I'm in the dead middle standing on my own head. Crazy! I'm sure there's some scientific reason but just plain cool is a good enough reason for us until we get into it I'm sure during one of their school lessons later this year.

Ryn's Recipes Revisited: Vegan Fudge Cupcakes

I love these cupcakes and since I have an extreme food allergies these are 100% soy and corn free!



 Ingredients:
1 c boiling water

1 c dates (dried)
1/4 c pineapple (dried)
1 t baking soda
1 c organic unbleached sugar

1/3 c organic canola oil

1/3 c + 2 T  organic rice milk

1 t vanilla *optional

2 c flour

2 1/2 T cocoa/chocolate powder

1/4 t salt

1/2 c nuts *optional





 Directions:
Pour boiling water over 1 c cut dates , pineapple and the soda.

Add organic unbleached sugar, oil, rice milk and vanilla.

Mix flour, cocoa, salt, nuts *optonal , into mixture.
Line cupcake tins with papers , spraying liners with a light coating of cooking oil to avoid sticking fill about 2/3 full.

Bake at 350 degrees for 16-20 minutes.

Makes 20 to 24 cupcakes.

Frost, if desired.



Vegan cocoa Frosting

ingredients:

Cocoa powder

Rice milk

Canola oil

Powder sugar

Salt

One Fish, Two Fish....


 
I have no idea what this boy is thinking EVER! This was day 4 of our trip the kiddos enjoyed meeting the cousins for the first time and their Great Aunt and Uncle, they might soon move up to greatest on the awesome scale. The kids just had a blast!



  Hmm... is that a coy fish or Little E back in the water after we told her to get out.

 Grilled pizza is the best, tried it for the first time after Hurricane Katrina when the power was out for a almost a week. it was a definite hit with the kiddos after along day in the pool.

 
We seriously love a good marshmallow roasting sugar rush.

 
 

Lulu was quite the smores extraordinaire that day and a bit of a fire bug too.
