Down by the Bay

The Peas and I strolled along the Bay yesterday evening watching the sunset, looking at the huge 100+ year old homes along the water, playing in the sand, golf, horseshoes and even a movie by the pool we ended the night with a good laugh at me in my agony after returning Lulu's serve playing beach volleyball, showing-off doesn't suit me well. 

Back to the beach again this time the Gulf awaits us, okay that sounds awesome but the reality my kids are a bunch of home bodies and hate the sand and sunshine with a capital H the complaints never seem to end until they're home and showered and the last grain of sand goes down the drain.

Getting Hippie!

Testing out the VW Camper Peace Peas Mobile, we decided to call it, for her maiden voyage to my homeland. I don't know if I've ever seen a VW with so many car seats one more and it would be maxed out.

The Peas are so excited to cruise and snooze we'll see if the novelty wears off any it's going to be a long strange trip again this year. I really want to deck it out with some colors and funky items but I think we'll just find it as we go so will have stories to tell.

No shoes Required. Clothing Optional.

Weekend Inspiration

Ryn's Recipes: Pink Lemonade and Lemon Cream Cupcakes

Pink Lemonade cupcakes
  • 1 box Organic white cake mix 
  • 1 cup frozen pink lemonade mix thawed (undiluted)
  • 1/2 cup water
  • 1/3 cup canola oil 
  • 3 egg whites
or from scratch

  • 2 cups all-purpose flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 tsp salt
  • 3/4 cup granulated sugar
  • 1/2 cup canola oil
  • 2 egg whites
  • 1 cup thawed frozen Pink Lemonade Concentrate
  • 1/2 cup sour cream or milk

- Preheat oven to 350 degrees makes 24 muffins
- Combine all of the ingredients in an electric mixer and begin by mixing low for 2 minutes
- Divide the batter evenly, filling the liners about 2/3 full
- Bake cupcakes for about 20-25 minutes or when cake tester comes out clean
- Allow cupcakes to cool before frosting

For Two-Tone Pink Lemonade Buttercream

3 cups confectioners sugar
1 stick unsalted butter (room temperature)
2 tbsp frozen pink lemonade concentrate
Pinch of salt
to make 2 colors of frosting add vegetable food coloring

 Combine all ingredients in an electric mixer on low until combined , increase speed to medium-high and beat until frosting is light and fluffy
 Separate frosting in 2 bowls and add color

Lemon Cream  Cupcakes 

  • 2 cups  flour 
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 4 1/2 teaspoons *plus 3 tsp freshly grated lemon zest
  • 1 1/2 stick (3/4 cup)  butter, softened
  •  1 1/2 cup plus *4 tablespoon sugar
  • 7 tablespoon plus *3 teaspoons fresh lemon juice
  • 5 large eggs
  • 3/4 cup plus *3 tablespoon cream cheese (about 6 ounces), softened
* set aside ingredients for cream center
preheat oven to 350° F. and line 12 cupcake tins with paper liners.
Into a bowl sift together flour, baking powder, and salt and whisk in 4 1/2 teaspoons zest. In another bowl with a fork blend butter, sugar, and juice until smooth. With a wooden spoon beat in eggs, 1 at a time, until smooth. Stir butter mixture into flour mixture until batter is combined well.

In a small bowl with a fork stir together cream cheese and remaining 3 teaspoon zest, 4 tablespoon sugar, and 3 teaspoon juice until lemon cream is smooth.
Spoon 3 level tablespoons batter and about 1 tablespoon lemon cream into each paper liner. Spoon remaining batter over lemon cream, smoothing tops. Bake cupcakes in middle of oven 20 minutes, or until golden brown, and transfer to a rack to cool. Makes 12 cupcakes.

Mystery Messes

I wonder sometimes often how does a puddle magically appear on my kitchen floor or the pile of clothes in the living room, they weren't there last time I entered the room and I never seem to see it happen. Who leaves the trail of toys from the bedroom to the bedroom or used up the whole roll of scotch tape today? I'm guessing it's the my sweet seemingly innocent kids but when does all this happen? For the most part I feel like we spend a huge chunk of the day together in close proximity and if they caused such messes I surely should know, right? There are the few occasion where I dozed off on the sofa or got busy reading a blog or the news online but it feels more like I harbor 4 Tasmanian devils in my house and can never seem to catch them in the act.

Tuesday's Dream Decor: Old doors New chapter + Laundry rooms

Today we close the doors to not only a house but to a chapter in our lives full of joy and sorrow. I have turned the key for the last time and there will be many things I'll miss.... like the girls roller blading through the hallways, teaching them to cook in the awesome kitchen I designed, taking long walks at night through the neighborhood, the parties and having our cat indoors sleeping on the girl's beds snoring but for us not everything that happened there was wonderful so I'm glad to finally shut the door on all the bad memories and more forward to better things ahead.

And a perfect way to announce my Tuesday's Dream Decor series full of images I collected over the past 2 years of everything I love in home decor and design. Unfortunately the sources on all the Laundry Room images are unknown I collected them before blogging and knowing blog etiquette.

I might not cringe at the thought of folding clothes and stain removal if my laundry room looked like any of these.

Here..... tiny Ninja, Ninja, Ninja

So I've have a fondness for this little toy ninja he is just so small and so cute I thought it would be fun to hide him out in the open everyday and who ever comes across him gets a quarter. The rule is no one can search for him or you're disqualified. I put him in a spot they will eventually come to like the telephone, the chalk, the lamp, hot air balloon or in plain view if they sit down to eat. The kiddos are having a great time with it and look forward finding the ninja in his next covert operation.

I thought the chalk was especially creative it took them until 4pm to locate him!

Let's go from tiny ninja to huge oversize balloon animal and admire the awesome sculpture by artist Jeff Koons's perfection.

Hey, Silly Head!

I love how my kids always want Mom to be in a good mood they try the usual tactics like a smile, a hug, a knock knock joke that makes absolutely no sense except to them and they laugh like it's the funniest thing ever said and they make funny faces the kind that breaks a frown and warms the heart and makes your day so much better.

Teenee Beekeenee

She sang....❛ istee bitsee teenee weenee polka dotee beekeenee ❜ all the way to the partee!

Little E was so excited to wear her first bikini since she and her brother sings the song over and over and over and giggle so it just sooooo cool to have one....But don't hold your breath unless you want water up your nose E told me as she ran over for the tenth time so I could squeeze the water out. 

Who needs a netti pot when you can use a fountain.

Lemonade + a Brother Anyone???

We had such a great time selling lemonade, cookies and brothers yesterday the weather was iffy like as in pouring rain and thunder all morning and by 11am the skies were still dark but what was I going to do with 3 gallons of hand squeezed Lemonade and 80 chocolate chip cookies? We had no choice it was Lemonade stand or bust and I give all the credit to the kiddos who managed to sell all the lemonade in the rain!

Lemonade and cookies weren't all some of them tried to sell.... We've had this tee for quite a while it was actually Lulu's and it a favorite in the house I wonder why?

It was so nice of Fantasy Island Toys in Fairhope to allow kids to have a stand in front of their store, we couldn't of had more fun and the Peas learned so much about greeting people, helping them and who's the most generous in the tip jar. Tomorrow there will be a teenage girl trying to sell lemonade to raise money for going to college next year we hope she does just as good as we did!

We officially sold 46 cups of Lemonade, drank 5, ate 13 cookies, sold 15 and made $56 WOW that's all around awesome in my book.

Ryn's Recipes Revisited: Sweet Date Cupcakes

It's been a while since I made cupcakes or visited my other blog and I thought it might be fun re-posting the 38 cupcake recipes I abandoned over at Ryn's Recipes (Ryn was my childhood knickname so be the name) and every Friday for the next 38 weeks this one is an awesome super sweet and super moist cc made with dried dates topped with straight sugar icing  and got the prize for the best of February '10.

  • 3/4 stick of butter at room temperature
  • 6 ounces of chopped dates soaked in 1/4 cup of boiling water
  • 3/4 cup sugar
  • 1/4 cup brown sugar, packed
  • 1 large egg
  • 1/4 tsp pure vanilla extract 
  • 1 1/4 cup flour 
  • 1/3 tsp baking powder
  • 1/3 tsp baking soda
  • 1/8 tsp sea salt
  • 2 tablespoons of cinnamon
  • 1 tablespoon maple syrup
  • 1/3 cup milk
-Preheat the oven to 350°F. Line cupcake pan with paper liners.
place chopped dates in a small bowl and pour 1/4 cup of boiling water over them.  Let sit for a few minutes.
Then cream the butter, sugar and vanilla. then cream together with dates,will be lumpy. Add the egg and mix well.
Add in sifted flour, baking powder, baking soda, salt and cinnamon. Add the milk. Mix only until blended.  
Fill cupcake cups 3/4 full. 
makes 9-12 cupcakes
Bake 20 - 25 minutes, until a toothpick comes out clean.

You can run but you can't hide from cleaning up your room or eating your vegetables.

Gearing up for the big day! What an awesome sign the girls made lets hope the hand squeezed homemade lemonade turns out just as awesome. Bonus it's suppose to be 96 degrees tomorrow so if your downtown FHP tomorrow check us out in front of Fantasy Island Toys and bring some change.

It's all about the Bread

I miss my kitchen, the one with miles of granite and butcher block counter tops, the one where the drawers actually opened and closed and the one I designed from the floor up. I miss cooking in that kitchen with the kiddos where there was room enough for two or even 10 people to be in there together making delectable treats and still I must through all it's ugly blue paint and minuscule work space cook healthy organic food despite my complete dislike of our current abode's culinary epicenter and in it have managed to make some amazing bread for the second time in the Pea's lifetime.

The Recipe:

I was very pleased with the consistency of the bread and think they make a perfect sandwich roll or if made small a great side roll with butter.
