Cupcake MONDAY: week 2

**Cookies and Cream Pumpkin Cheesecake Cupcakes**

I almost couldn't wait a whole week to make these delicious cupcakes


Makes 24 cupcakes

prep time 30 minutes

one package of golden double stuff oreos

2 - 80z packages philly cream cheese at room temperature

2 eggs at room temperature

2/3 cup of granulated sugar

10-15 0z of canned 100% pumpkin filling

1 teaspoon of cinnamon

- Place cupcake liners into the tray adding one cookie into each cup , then crumble the remaining cookies in a bag , put aside.

-Beat cream cheese and sugar with hand mixer until smooth then mix in the eggs and pumpkin until well blended, folding in the crushed cookies with a spatula.

-Even distribute the cheesecake filling in the cups making sure the cookie is completely covered.

Place into 300 degree oven

Bake for 22 minutes or until set

-Let cool on cooling rack then place in fridge for 4 hours or until you can't take waiting any longer to taste your creamy, sugar delights!

I have to bake with the oven lights on, so the kids can run into the kitchen every 2 minutes and yell DONE!!

Aidan just couldn't wait, YUM YUM!!!
